Category: Recipes, Soup Soup Ingredients 1lb ground beef 1c chopped onion 1c shredded carrots 1c chopped celery 1 1/2 tsp dried basil 1 1/2 tsp dried parsley 8 tbsp (1 stick) butter 12 c chicken broth 8 c cubed potatoes 1/2 c all-purpose flour 4 c cubed sharp Cheddar cheese 3 cups milk 1/2 cup sour cream Salt and pepper to taste Instructions In a large soup kettle, cook and stir vegetables and beef until beef is brown. Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 15 minutes. Add butter and milk, stir in flour gradually until smooth, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil. Add salt and pepper if need to taste. May add bacon crumbles if wanted.
