FRY BREAD

Ingredients

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/8 teaspoon salt

  • 1/3 cup hot water

  • Vegetable oil for deep-fat frying

Instructions

  1. PREP:

  2. Get out a cast iron fry pan.

  3. Combine the flour, baking powder and salt and stir in the hot water to form a soft dough.

  4. Cover and let stand for 30 minutes. It will still be warm to the touch.

  5. Divide the dough in three, each piece to form a large, flat, pancake—quickly so as not to overwork the dough.

  6. FRYING THE FRY BREAD:

  7. Heat about an inch of vegetable oil to 375°

  8. Lay pieces of dough in the skillet- they will immediately puff up a bit.

  9. Turn them over as they turn golden brown—about 30 seconds—using a strainer meant for frying.

  10. Remove them to drain on paper towels as soon as the other side became golden.
