FOURB SPINACH AND TORTELLINI SOUP
Ingredients
1 lb sweet Italian Sausage
1/2 large sweet onion chopped
6 large garlic cloves, minced
2 cans (14-1/2 ounces) diced tomatoes, undrained
4 cans (14-1/2 ounces each) beef broth
1 qt can of Vegetable juice
2 tbsp Italian seasoning
2 pkgs (9 ounces) refrigerated cheese tortellini
8 cups fresh baby spinach I use double this
Salt and pepper to taste
Shredded Parmesan cheese if desired
Instructions
In a large soup kettle, chop and cook sausage with onion and garlic; cook and stir until sausage is done.
Stir in tomatoes, broth, vegetable juice and Italian seasoning; bring to a boil.
Add tortellini; bring to a gentle boil. Cook, uncovered, just until tortellini are tender, 7-9 minutes.
Stir in spinach. Sprinkle servings with cheese if desired.
