COFFEE CAKE ON THE FARM

I found this recipe on all recipes.com and made it for a gathering at our farm. Such a hit and darn good.Ingredients:Ingredients:1/3 cup butter, softened¼ c sugar (I use splenda)1 egg1 ¼ cup milk1 ½ cup flour1 (3.4 oz) pkg instant vanilla pudding mix1 TBSP baking powder1/2 tsp salt1/2 cup chopped walnutsTopping:Topping:½ cup chopped walnuts1/3 cup packed brown sugar¼ tsp ground cinnamonDirections:Directions:In a mixing bowl, cream butter and sugar. Beat in egg.Combine flour, dry pudding mix, baking powder and salt.  Add to the creamed mixture alternately with milk. Beat until blended. Stir in walnuts.Place in a prepared 13x9 pan.Mix topping ingredients together and sprinkle on top of cake.Bake 375 for about 30 minutes; check with tooth pick.
